Quite serene, beguiling perfume. Cherries, quince and tiny touch of vanilla, not too sweet though. Delightful minerality. Juicy and energetic in the mouth with a delightful savory char from the oak. Cleansing tannin, showing this wine can be enjoyed now but will benefit with time in the cellar
Principia was estalished by winemaker Darrin Gaffy in 1995 at Red Hill in Victoria's Mornington region. The wine is grown, made and bottled on site. No irrigation is used, no pesticides are used, juice is extracted by a basket press, gravity controls all juice, must and wine transfers and indigenous yeasts are used for both primary and secondary ferments.
Pronounced prin-kip-eea (which is evidently how Caesar would have said it with a hard 'k'), the name comes from the word 'beginnings' in Latin. It is also the name of Sir Isaac Newton's famous scientific work which incorporated his theory of gravitation and the laws of motion.
